Birthday Dinner….

The plating! Gluten Free Chicken Parmesan. It was a hit!!We love to try new recipes…and the birthday recipient requested their favorite meal…..Chicken Parmesan! They are use to going to Red Robin to get this. However, knowing that it had to be GF; I stepped up to the challenge- when a recipe was found on Pinterest and true to my nature: I tweaked it a bit to make it mine. I, of course…. added a whole lot more garlic, I marinaded it over night, and I made some with a breadcrumb crust. So there were two choices depending on your likes. I love love Parmesan Cheese. So I used fresh and not the ‘stinky feet ‘ green container of cheese most use on Spaghetti. There are some in my family who are not so happy with the cheese version and that is where the breadcrumb crust came in. 🙂 I want everyone to be happy campers at my table.

I was so happy when it was a hit and no one missed going out for this meal! I have already been asked to make it again. True success in my book. 🙂

Gluten Free Parmesan Chicken Pasta

Yield: Dinner for four


  • 4 boneless, skinless chicken breasts
  • 2T Olive Oil
  • 2T garlic red wine vinegar
  • 1clove of minced garlic
  • 1T Italian seasoning
  • 2 eggs
  • 1/2 cup Fresh Parmesan cheese
  • 1 cup marinara sauce
  • 1/2 cup mozzarella cheese
  • GF Pasta of choice


  1. Place chicken in a gallon size zipper bag with olive oil, red wine vinegar, Italian seasoning and garlic to marinade for at least 30 minutes.
  2. Beat eggs in a mixing bowl for dipping chicken and put Parmesan cheese on a plate for rolling chicken.
  3. Remove chicken from bag and dip in egg.
  4. Roll in Parmesan cheese and place on a baking sheet.
  5. Bake a 400F for 30-40 minutes or until cooked through, and remove from oven.
  6. Spoon marinara and sprinkle mozzarella over chicken.
  7. Return to oven until mozzarella is melted and bubbly.
  8. Serve on a bed of Gluten Free Pasta
